The ingredients are almost always of high quality – beautiful scarlet rolls of paper-thin beef, ultra-fresh seafood – and the service is friendly and helpful. It has to be, as shabu shabu restaurants are filled with confused first-timers juggling ladles and chopsticks and trying to figure out just how long it really takes an eel ball to cook.

So after realizing the buoyancy of the mushroom ball, we started speculating how far it would go if we bounced it outside. It just so happens that Shabu Zen is located behind a parking lot. So I wrapped the bouncy ball in a napkin and we experimented in the lot. I kid you not, the mushroom ball bounced all the way across the lot, through several puddles, and when we caught up with it, we realized that it had still retained its basic shape.
